Park Hyatts are the Hyatt group’s top-of-the-line luxury hotels: the kind where you find original art on the walls and award-winning chefs in the kitchens (not to mention an extra digit or two on your bill to match). So the fact that Hyatt have now chosen to open a Park Hyatt in Hyderabad is perhaps an indication of how much money is sloshing around in the city. Tre-Forni—literally ‘Three Ovens’—specialises in the cuisine of northern Italy and, particularly, in the culinary dialects of Lombardy, Veneto and Liguria. Northern Italian cuisine is different from the more familiar southern Italian cuisine because, among other things, this region has historically been wealthier, and its climate colder. We looked through the menu and couldn’t decide, so we left it to Chef Matteo Grandi to order for us, and then sat back in anticipation. He first sent us an antipasti platter of Italian cold cuts and cheeses. This was followed by a silky ravioli with chicken liver, parmesan fondue and truffles. Next came plump tenderloin filets with porcini mushroom sauce. And, finally, a dessert sampler, which thoroughly spoiled us with servings of panna cotta, mille figlia, tiramisu (one of the best we’ve had in a long time) and macarons. In fact, the only part of the meal we didn’t enjoy was the bill we ultimately received, which put us on a diet of dry chapatis for the rest of the month. But it was probably worth it.
