Beginning from February 27, Hyaat Regency Chennai (chennai.regency.hyatt.com) will be celebrating the cuisine of the temple towns of South India with the food festival, The Pilgrim’s Palate. The festival will be held at the hotel’s all-day dining restaurant, Spice Haat. The brainchild of Chef Balaji Natarajan and Rakesh Raghunathan of Puliyogare Travels, the festival will centre around that important part of the temple experience, the ‘Bhog Prasad’. Simple, tasty food, the prasad is dependent on seasonal ingredients that are hand-picked by the temple’s cooks and cooked with subtle use of spices.

The menu for the ten days of the festival, which ends on February 5, have been created by Natarajan and Raghunathan with a specific focus on local ingredients and indigenous culinary traditions.
