Indian Cheese Brand Wins International Award

Mumbai-based micro-creamery Eleftheria, which specialises in making &lsquoEuropean-inspired cheese classics&rsquo recently made the country proud by winning the silver at the World Cheese Awards 2021, held in Spain, for their signature Brunost.

Owned by Mausam Jotwani Narang, it is the first Indian cheese company to win at the World Cheese Awards, according to media reports.

This Norwegian style whey cheese is the first brown cheese in India, according to the company. It even has &lsquoElEf&rsquo embossed on it in Devanagari.

Narang, who started making cheese as a hobby in 2013, launched the brand in 2015. As the demand for her artisan products, especially burrata and mozzarella, increased, she was left with lots of whey, which she did not want to waste. That inspired her to experiment with brown cheese. It took her almost two years to perfect the product, which was finally launched in 2020.

Made by caramelising remnant cheese whey from the cheese-making process, it tastes like a slightly salted caramel milk fudge with toffee notes. It has a mild lactic tang and inherent sweetness there is no added sugar, salt or flavouring, according to the company. During the lockdown, they further refined it to make it creamier, more toffee like.
