Demarcated by ingredients from a grid of home-grown farmers and scavenging trips, Masque&rsquos menus are a nuptial of native flavours, ethnicities, originality and skill, continually progressing with the seasons. Anticipate favourites from the restaurant&rsquos contemporary Indian staples, as well as try-outs from the Masque Lab interlaced into the menu.

&ldquoFor our fifth anniversary this September, we aspired to take a palate of Masque outside Mumbai. We&rsquove been preparing for it since a few weeks now, with Delhi as our first stop, where the team at The Manor has made the process&nbspand experience of setting this up
exceedingly smooth. We sold out the three nights within two days, so the response has been extremely encouraging&rdquo, shares chef and owner Prateek Sadhu.

The food at Masque has certainly not been about returning to regional recipes and merely plating them with novel twists &ldquoWe&rsquore constantly trying to revisit conventional gastronomy and ingredients with purpose, and discover the ways in which these can shape multi-ethnic bridges. And that&rsquos truly the viewpoint we&rsquore hoping to bring to each terminus we travel to - to give them a taste of what the Masque experience is all&nbspabout&rdquo, further adds Sadhu.

Here are some fingerlicking fare from their menu that can be savoured Barramundi,  Clam Rogan Josh, Goan Sausage Puri,&nbspLamb Neck Yakhni/Morel Yakhni, Morel Miso Rice, Kabuli Channa ice cream with Gondhoraj Lime granita and Banana Honey, Jackfruit Sausage and Everything Katlam.
