Make Eid Magical With This Unique Dessert Recipe

This sticky Date Pudding by Chef Ali El Bourji At Atlantis, The Palm, is the perfect Eid treat

A favourite amongst Arab celebrities and royalty the world over, and one of the most prominent Lebanese chefs in the region, Chef Ali’s Iftar experience is something that one simply cannot miss. The Lebanon-born chef has belted out wonders nonstop from Arab cuisine for more than two decades. He has also appeared on shows such as MasterChef Arabia, Fatafeat and Kitchen Impossible.

With Eid around the corner, Chef Ali brings to you one of his famous dessert recipes, The sticky Date Pudding. This unique recipe is straight out of the Ayamna Kitchen at Atlantis, The Palm (Dubai).


Make the sticky Date Pudding, the Ayamna Kitchen way

Date Pudding

Butter 220gm
Castor sugar 650gm
Egg whole 440gm
Date paste 650gm
Water 700ml
Flour 650gm
Baking soda 30gm

Caramel Sauce
Castor sugar 1kg
Butter 100gm
Cream 1l


1. In a planetary mixer, cream butter and sugar together.

2. Boil the date paste and water together until they are combined as a paste,

3. Add the whole eggs to the butter and sugar mixture.

4. Once creamed, add the date paste mixture to the above.

5. In the end, fold in the flour and baking soda to the mixture.

6. Pour into greased moulds and bake at 180 C until cooked.

For the caramel sauce

1. Caramelise the sugar until it is golden in colour.

2. Add the cream and whisk until they are combined.

3. The caramel sauce will be ready now. Pour it over the date cake and garnish with almond flakes.
