A sabich is a pita pocket stuffed with crispy fried eggplant, hardboiled egg, creamy hummus and tahini, along with Israeli salad and pickles. The sandwich created by Israel’s Iraqi Jewish community is an absolute street food favourite among locals.

Unlike the typical bagels, the Jerusalem Bagel is elongated, soft, slightly sweet and similar to regular bread. Vendors sell freshly baked Jerusalem Bagels all over the streets usually accompanied with some za’atar.

ТÑ‹ навеÑ€ное не замеÑ‚ила, я давно вÑ‹кладÑ‹вала, Ñ‚очно помнÑÂŽ!"- сказала я и поняла, что Ñ€ецепÑ‚а действиÑ‚елÑÂŒно неÑ‚... И, если честно, я даже не понимаÑÂŽ как Ñ‚ак получилосÑÂŒ, поÑ‚ому что ÑÂ…ачапури по-аджарски одно из самÑ‹ÑÂ… популярнÑ‹ÑÂ… и лÑÂŽбимÑ‹ÑÂ… в нашей семÑÂŒе блÑÂŽд. ÐÂ’ общем испÑ€авляÑŽсÑÂŒ и делÑŽсÑÂŒ с вами оченÑÂŒ вкуснÑ‹м Ñ€ецепÑ‚ом ÑÂ…ачапури, для коÑ‚оÑ€ого вам понадобится: 500 гÑ€ муки (на Ñ„оÑ‚о ÑÂ…ачапури из муки грубого помола, но можно бÑ€аÑ‚ÑÂŒ и обычнуÑÂŽ высшего сорта) 300 мл Ñ‚Ñ‘плого молока 1 ч.л соли 1 ст.л саÑÂ…аÑ€а 10 гÑ€ дÑ€ожжей 25 мл Ñ€астиÑ‚елÑÂŒного масла ÐÂ’ начинку: 300 гÑ€ Сулугуни 400 гÑ€ мягкого сыра 60 мл сливок + несколÑÂŒко яиц 3-5 шт (зависиÑ‚ оÑ‚ Ñ€азмеÑ€а вашиÑÂ… ÑÂ…ачапури) Сливочное масло для подачи Способ пÑ€игоÑ‚овления: ÐÂ’ Ñ‚Ñ‘плой молоке Ñ€азведиÑ‚е саÑÂ…аÑ€ и дÑ€ожжи, дайÑ‚е постоятÑÂŒ минут 5, а заÑ‚ем добавÑŒте масло, солÑÂŒ и пÑ€осейÑ‚е муку (муки можеÑ‚ понадобиÑ‚ÑŒся чутÑÂŒ болÑŒше или чутÑÂŒ менÑŒше, всё зависиÑ‚ оÑ‚ еÑ‘ качества). Ð’ручнуÑÂŽ замесиÑ‚е мягкое эластичное Ñ‚есто, пеÑ€еложиÑ‚ÑÂŒ его в глубокуÑÂŽ миску, накÑ€ойÑ‚е крышкой и дайÑ‚е постоятÑÂŒ в Ñ‚епле 1,5-2 часа. Для начинки Ñ€азомниÑ‚е мягкий сыр вилочкой, добавÑŒте к нему сливки и крупно натёртый Сулугуни. ПеÑ€емешайÑ‚е до одноÑ€одности. Спустя вÑ€емя обминаем Ñ‚есто, делим его на желаемое количество частей (будущиÑÂ… ÑÂ…ачапури) и подкаÑ‚Ñ‹ваеÑ‚ каждуÑÂŽ частÑÂŒ в шаÑ€ик. ЗаÑ‚ем Ñ€аскаÑ‚Ñ‹ваем шаÑ€ики в круглÑ‹е лепёшки (не оченÑÂŒ Ñ‚онко), Ñ€аспÑ€еделяем вилочкой по всей повеÑ€ÑÂ…ности лепёшек начинку и пÑ€иступаем к Ñ„оÑ€мовке: Края лепёшки нужно завеÑ€нутÑÂŒ, скручивая вместе с начинкой, и слепиÑ‚ÑÂŒ с двуÑÂ… стоÑ€он, обÑ€азуя вытянутуÑÂŽ лодочку. Лодочки пеÑ€екладÑ‹ваем на пÑ€оÑ‚ивенÑÂŒ, смазаннÑ‹й маслом и оставляем на Ñ€асстойку на 20-30 минут, а заÑ‚ем вÑ‹пекаем пÑ€и 180°Ð¡ до румяного цвеÑ‚а. За 5 минут до гоÑ‚овности ÑÂ…ачапури нужно вÑ‹нутÑÂŒ из дуÑÂ…овки и Ñ€азбиÑ‚ÑÂŒ в каждуÑÂŽ лодочку по целому яйцу, либо Ñ‚олÑÂŒко желÑ‚ок по вашему вкусу, а белком можно слегка смазаÑ‚ÑÂŒ кÑ€ая ÑÂ…ачапури, заÑ‚ем снова убиÑ€аем ÑÂ…ачапури в дуÑÂ…овку на 5 минут. ГоÑ‚овÑ‹е ÑÂ…ачапури подаÑ‘м горячими с кусочком сливочного масла и кружечкой аÑ€омаÑ‚ного чая. Приятного аппеÑ‚иÑ‚а!

Similar to bourekas, sambusak is made with mashed chickpeas, onions and spices wrapped in a triangular dough pocket. An Indian styled version for the same is available in Tel Aviv.

Shakshuka is a dish with eggs poached in a sauce of tomatoes, sweet and spicy peppers and is often spiced with cumin and topped off with freshly cut herbs. The bread swipe across the pan to pick up the runny egg drenched sauce is worth it.
