Sugar-free potatoes is the new carrot being dangled before diabetics today. But beware, it could be a hoax. Potatoes stored in special warehouses at higher temperatures do have a lower sugar content. "However, since most of the carbohydrate in potatoes comes from starch and only 2 per cent from sugars, 'sugar free' potatoes are not too different from ordinary ones," says Dr S.M. Paul Khurana, director of Central Potato Research Institute. Before buying these potatoes, do consult your doctor to find out how much you can safely have.
