Dating back to the times of Cleopatra, chicory is a curly, bitter perennial lettuce identifiable because of its charming blue-azure flowers. It is cultivated in northern Europe, and is also commonly found in India, Africa, Florida and California. The plant boasts of various health benefits, including  for the digestive tract, heart and liver. The chicory root, also known as succory, is used as a caffe­ine-free ingredient in coffee from New Orleans—coffee lovers will be amazed at how smooth chicory makes their hot drink, offsetting the bitter taste and giving it a beautiful dark colour.
