Which is the world’s hottest cuisine? Claims are variously made for the Liberian, Trinidadian, Sichuanese and New Mexican cuisines. But we would respectfully submit that it is probably Rayalaseema food—one of the three dialects of Andhra cuisine. Rayalaseema is Andhra Pradesh’s “Wild West”, traditionally known for its warlords and family blood feuds that continue down the generations. The question is, did the fiery temperament lead to the fiery cuisine, or vice versa?

This is one of the few restaurants we’ve found that offers real Rayalaseema food. OK, so exactly how hot is it? Well, let’s just say that being able to handle red-hot Andhra food is just the entry ticket. Try the brain masala, liver fry or the house speciality of talakaya maamsam (goat’s head curry). These are typically eaten with thick jowar roti or ragi sankati (a kind of coarse ragi porridge). Other specialities are natu kodi pulusu (chicken in spicy gravy) and gutti vankaya (masala-stuffed brinjal). Rayalaseema-ites explain that their food is admittedly very hot on the tongue in the beginning, but the real flavours slowly emerge as the meal progresses. And that is the beauty of the cuisine, they say. But that’s assuming that your nervous system hasn’t collapsed after the initial fire-bombing. We recommend that you keep a big glass of soothing buttermilk handy (cold water or soft drinks won’t help). And for the next few hours, better stay within prudent range of a loo. Just in case.
